Prinsesstarta, swedish traditional cake
Prinsesstarta is a traditional swedish cake, based on soft and airy sponge cake, whipped cream and a touch of marzipan to covers all.
The original recipe appeared in 1930’s in a cookbook written by a teacher of the daughters of Prince Carl, Duke of Västergötland. Originally called Green Cake because of the colour of the marzipan, it then changed it’s name to “Princess Cake” because the princesses were said to have been especially fond of the cake.
Another variant of this cake is with a layer of red berry jam which is called Operatårta (Opera Cake).
The first time I taste the Prinsesstarta is during my trip to Stockholm, more precisely at the Östermalms Saluhall.
